- Coconut oil
- peanut butter
- rolled oats
- coconut flakes ( desiccated )
Ok this is going to be a bit of eyeing up the amounts as I do so bare with me 🙂
Put some coconut oil into a saucepan and heat up gently it should be quite a bit as to coat the oats and raisins. Add 2 table spoons of the peanut butter into the oil with a table spoon or squeeze of the honey. Mix then add oats Basically enough to fill a shallow backing tray bake tray. Add the raisins and mix everything. It should be covered with the oil, peanut butter so not dry BUT not over wet. Place the mixture onto a grease proofed paper lined baking tray. Press down firmly with the back of the spoon.
Add some coconut flakes on the top or chopped nuts. You could also add chocolate to the top now too if you wanted to. I have also mixed in nutella and choc chips into the mixture too. Hell once i added a Snickers bar chopped up into the mixture 🙂 Place in the oven on gas mark 5 ish for about 10-15 mins.
Leave to cool then slice and place in the fridge. It might crumble while warm, but once the oils is cooled it will make solid flapjacks. Sorry I don’t have the exact amounts as I tend to just throw the mixture together by eye. Yes that is how easy it is 🙂
